I cut the fillets into fish bite size pieces, roll them in flour, dip them in whisked egg and then bread crumb them. Shallow fry in sunflower oil. Kids eat them like chicken nuggets. I have four kids so the bag of 5 go in one meal each time.
I also like to grill them in butter and lemon pepper seasoning.
Serve with a fresh tossed salad, slice of lemon or two and some Paul Newman's Caesar salad dressing and you can't go wrong
