I just used some shade cloth under the trailer and up to the gunwale, a bit rough but it wasn't on and off every day.

As 3Macks suggests, shade cloth under the trailer and up around the boat, forward of the axle.
Single rock tamer flaps across the rear of the tow vehicle also flick up rocks when the suspension lets the flap touch ground.
Fit it between each stone road run.

I have been lazy a couple of times doing the 80km out to my nearest creek and haven't bothered chucking the outboard cover (I have to remove the hydrofoil from the leg to make it fit, PITA) on.

Anyway the leg on my motor now has a pretty sharp edge across the front... Do make sure you remember to protect your motor as well.
Is a better golfer than fisherman... Apparently
